By all accounts sweeter, creamier, and more flavorful than the Cavendish banana that has populated grocery stores since the 1950s, the Gros Michel banana is a pleasure lost to the modern world.

The first Gros Michel banana plant had been grafted and re-grafted around the world, and genetically identical deliciousness meant genetically identical vulnerability to a root fungus that spread like a plague from plantation to plantation. In a mere handful of years the Gros Michel went from industry standard to functionally extinct.

This is the song of the last Gros Michel banana in cultivation. Despite the sad story it's a sweetly nostalgic scent: creamy banana, vanilla, and caramelized sugar backed by the warmth of amber.
